Acorn-fed 100% Iberian Ham MALDONADO

The 100% pure Iberian acorn-fed pig from the original native breed of the Dehesa Iberic. Without crossbreeding and raised there, it is the origin of the MALDONADO 100% Iberian Bellota Ham.
Fed throughout his life under strict control of grass and feed made by ourselves based on top quality cereals. Thus not losing control of the optimal quality that we want to obtain.
During the «montanera season» (season of maturation and acorn fall) the animal eats as much grass and acorns as it wants, having areas equivalent to more than 4 football fields for each one.
Unlike farms that fatten pigs from a young age with feed that is not controlled in its production. Each animal arrives at the montanera, healthy and athletic as a result of the nutritional control and exercise of a free animal. It is there, with the ingestion of acorns, where it acquires all the fat that characterizes it. That’s why a pig in these conditions is so special. Every gram of bacon is pure flavor and its fat is unsaturated.
The cold winters and hot summers in Extremadura provide a serene healing with personality. Thus losing the lowest oleic acid from the acorn diet.
In tasting it we noticed the silkiness that the acorn provides, the unique aroma and a unique bright color.
